Rouleaux de printemps colorés avec sauce cacahuète lait de coco

Voici une recette colorée et très facile à réaliser !

Les rouleaux de printemps peuvent être une bonne entrée avec une belle variété de légumes de saison ou un plat complet si vous y insérez des spaghettis de riz. La sauce gourmande à la cacahuète est un apport de protéines  végétales dans cette recette.

N’hésitez pas à varier les plaisirs avec d’autres légumes, cuits ou non, herbes ? Si vous souhaitez l’emporter au bureau, c’est un excellent substitut aux sandwichs, pour le côté pratique il est possible d’insérer la sauce au centre du rouleau.

Ingrédients 6 rouleaux  

  • 6 feuilles de riz
  • 75gr de pousses germées (alaflafa, poireau, trèfle..)
  • 4 brins de menthe
  • 4 carottes
  • 1 avocat
  • ¼ de chou rouge
  • 1 radis red meat
  • 1 petite mangue

Pour la sauce N°2 :

  • 4 c a s de purée de cacahuète
  • 2 c a  s de tamari
  • 1 c a s de lait de coco
  • Cacahuètes grillée et concassées

Préparation (30 min) :

Préparer les légumes, couper en julienne les carottes, en fines lamelles l’avocat, la mangue et le chou rouge et à la mandoline le radis Red meat. Prélever les feuilles de menthe. Disposer tous les ingrédients devant vous afin de les avoir à disposition.

Dans un bol, préparer la sauce en mélangeant de façon homogène, la purée de cacahuète, le tamari et le lait de coco puis saupoudrer d’éclats de cacahuètes grillées.

Prendre une grande assiette ou saladier, y ajouter de l’eau tiède, tremper la feuille de riz jusqu’à ce qu’elle se ramollisse un peu et l’étaler sur le plan de travail.

Commencer à garnir la feuille dans le premier tiers de la feuille à 2 cm du bord devant vous, superposer tranches d’avocat, carottes, mangue, pousses germées et chou rouge. Commencer à refermer en serrant bien les ingrédients dans la feuille pour faire un premier demi-tour.

Disposer de nouveaux des ingrédients comme les feuilles de menthe et replier les bords vers l’intérieur pour refermer les côtés et rouler à nouveau un demi-tour.

Positionner des lamelles de radis red meat et refermer jusqu’au bout.

Avec un couteau bien aiguisé couper le rouleau en deux en biais ou droit.
